Spinach roll

Ingredients for 4 persons:
80 g soft butter
3 egg yolks
1 tsp butter
300 g cooked and chopped spinach
½ tsp grated nutmeg
50 g grated parmesan
freshly ground pepper
grated parmesan
serve with tomato sauce
50 ml cream
100 g cooked and mashed potatoes
½ tsp powdered nutmeg
3 Egg whites
60 g flour
30 g onions
1 garlic clove


Beat butter until creamy and add egg yolks one by one. Add cream, potatoes, nutmeg and salt. Beat eggwhites with salt until stiff and add to butter mix alternating with the flour. Preheat oven to 180° Celsius. Put cookie paper on baking pan and pour dough onto pan. Spread evenly, then bake for 8 to 10 minutes. Let cool and then take off paper.

Spinach filling:

Peel and chop onion and garlic. Sautee in butter, add spinach and season with salt, pepper, nutmeg and parmesan. Spread onto baked dough and roll it up. Warm the roll, cut into 2 cm thick slices and serve with parmesan, browned butter, tomato sauce and basil.
